Irish Caramel Hobnobs

Have you heard of Hobnobs? They are made by McVities and are one of the most delectable oaty biscuits (cookies) in my culinary collection of British and Irish delights. Sometimes I find them in stores; sometimes I don’t. One such day, I was thinking of making oatmeal cookies, but realized, why not make my very favorite of them?
In addition, I love (love) how so many of these sweet biscuits are either dipped in milk chocolate or caramel, so I went with that thought. Oats and caramel were meant to be together and I was going to help them along.
Irish Caramel Hobnobs
Homemade version of famous Irish oat Hobnob cookies, dipped in caramel (optional)
Ingredients
- 10 TBSP butter
- 3/4 cup granulated sugar
- 1 TBSP milk
- 1 tsp golden syrup or molasses
- 1 tsp baking soda
- 1 cup self rising flour
- 1 1/3 cup rolled oats
- Caramel for dipping (I used this one) https://www.bonappetit.com/recipe/caramel-hard-sauce
Instructions
- Preheat the oven to 300 degrees. Line two baking sheets with parchment paper.
- Cream the butter and sugar until pale and fluffy. Add in the milk, golden syrup/molasses and baking soda until combined, followed by the flour and oats.
- Shape the dough into 20 equal sized balls and place two inches apart on baking sheets. Bake for 25 minutes (cookies will be golden and firm.)
- Once both the cookies and caramel are completely cool, brush or spread the caramel onto a thin layer on the bottoms of the cookies. Leave on a wire rack, bottoms up, until caramel hardens. Scoop off to cool on a wire rack.
